    Chimichurri is a South American sauce made with fresh herbs, seasonings, garlic, vinegar, and oil. It’s often used as a condiment for grilled meats, seafood, tacos, and veggies. In addition to green chimichurri made with cilantro or parsley, there’s also red chimichurri that’s made with roasted red peppers. 

    Ingredients You’ll Need

    • fresh cilantro
    • red wine vinegar
    • garlic
    • red onion
    • dried oregano
    • red pepper flakes
    • olive oil
    • salt and pepper

    How to Make Cilantro Chimichurri

    • Add the cilantro, vinegar, garlic, onion, oregano, red pepper flakes, and 1/2 of the olive oil to the blender.
    • Pulse to mince and combine the ingredients.
    • Add the rest of the olive oil and gently stir to combine.
    • Transfer the sauce to a mason jar and set it aside at room temperature for 20 minutes to let the flavors meld.

    Transfer the chimichurri to an airtight container and store it in the fridge for up to 7 days.

    • 2 cups fresh cilantro
    • 2 tablespoons red wine vinegar
    • 3 cloves garlic peeled
    • 1/2 small red onion peeled and cut into chunks
    • 2 teaspoons dried oregano
    • 2 teaspoons red pepper flakes
    • 1 cup olive oil divided
    • salt and pepper to taste

    Instructions 

    • To a blender or food processor, add the cilantro, vinegar, garlic, onion, oregano, red pepper flakes, and 1/2 of the olive oil.
    • Pulse to mince and combine the ingredients.
    • Add the rest of the olive oil and gently stir to combine.
