What is Chimichurri?
Chimichurri is a South American sauce made with fresh herbs, seasonings, garlic, vinegar, and oil. It’s often used as a condiment for grilled meats, seafood, tacos, and veggies. In addition to green chimichurri made with cilantro or parsley, there’s also red chimichurri that’s made with roasted red peppers.
Ingredients You’ll Need
- fresh cilantro
- red wine vinegar
- garlic
- red onion
- dried oregano
- red pepper flakes
- olive oil
- salt and pepper

How to Make Cilantro Chimichurri
- Add the cilantro, vinegar, garlic, onion, oregano, red pepper flakes, and 1/2 of the olive oil to the blender.
- Pulse to mince and combine the ingredients.
- Add the rest of the olive oil and gently stir to combine.
- Transfer the sauce to a mason jar and set it aside at room temperature for 20 minutes to let the flavors meld.
How To Store Cilantro Chimichurri
Transfer the chimichurri to an airtight container and store it in the fridge for up to 7 days.
Can You Freeze Cilantro Chimichurri?
Yes. Freeze the chimichurri in a freezer-safe container for up to 1 month. Thaw the chimichurri in the fridge overnight before using.

Easy Cilantro Chimichurri Recipe
Ingredients
- 2 cups fresh cilantro
- 2 tablespoons red wine vinegar

- 2 teaspoons red pepper flakes
