Creamy Tomato Soup Recipe

Ready to take tomato soup to the next level? Transform fresh tomatoes into a delicious soup with the perfect balance of flavors. It’s ready to serve in 30 minutes, so you’ll never need to go back to canned soup again!

Ingredients 

  • 2 cups canned tomato puree
  • ½ cup low fat buttermilk
  • ¼ cup fresh basil leaves
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons minced fresh garlic
  • salt and pepper to taste
  • Optional rosemary for garnish

Instructions 

  • In a food processor, add garlic, olive oil, and basil. Process into a thick paste.
  • Add the remaining ingredients and continue processing until thoroughly mixed.
  • Once the desired consistency is achieved, transfer into a serving bowl and chill in the fridge. Garnish and serve chilled.
