Almond Flour Pancakes Recipe
Ingredients
- 1-1/3 cup blanched almond flour
- 1 teaspoon baking powder
- 1/4 teaspoon sea salt
- 1/4 cup almond milk, more if needed
- 2 large eggs
- 1 tablespoon pure maple syrup
- 1 teaspoon vanilla
- olive oil
Instructions
- Whisk almond flour, baking powder, and salt in a medium bowl.
- Whisk almond milk, eggs, maple syrup, and vanilla in another small bowl.
- Pour wet ingredients into the bowl with the dry ingredients and stir to combine. If the batter is too thick, add more almond milk. If it’s too thin, add more almond flour.
- Brush a non-stick skillet with olive oil and heat over medium-low heat. Pour 1/4 cup of batter onto the pan. (Note: These pancakes are delicate so make sure to keep them small.) Cook pancakes for 1 to 2 minutes per side. Reduce the heat if the edges begin to burn.
- Serve with maple syrup or fresh berries.
